SPEEDY LOW-SUGAR VEGAN STRAWBERRY SCONES

Super simple, fruity and low in sugar – these scones are perfect for a quick bake or to store in the freezer for later!
Ingredients
115g (4oz) self-raising wholemeal flour
½ tsp baking powder
½ tsp ground cinnamon
25g (1oz) coconut oil
15g (½ oz) caster sugar – less than most recipes!
80g (2½ oz) hulled fresh strawberries, chopped
Around 4 tbsp of your choice of milk – I use soya – plus a little extra for glazing
These ingredients are not only easily accessible, but they also help to create a treat that feels indulgent while still being healthy.
Preparation Steps
Heat oven to 220°C / fan 200°C / gas 7. Lightly flour a baking tray and set it aside.
Mix flour, baking powder, and cinnamon in a bowl. Rub in coconut oil until the mix looks like breadcrumbs.
Stir in sugar and strawberries, then add milk gradually to form a soft dough.
Gently knead on a floured surface. Divide into 5 rounds.
Cool on a wire rack – or enjoy warm!

Tips
Air Fryer: These can be made in the air fryer and may take a few minutes less cooking time.
Fresh Strawberries: Use fresh strawberries for the best flavour.
